OK listen, this recipe is one I’m excited to share with you. It combines my two favorite desserts on the planet. Red Velvet cake and Butter pecan Ice cream. I decided to combine my two loves into red velvet cookies with a butter pecan cream cheese icing. Go ahead and pick your tongue off the floor. In the mean time we can thank my grandma for this obsession that has now turned into red velvet cake mix cookies.
While most kids love your basic chocolate or vanilla, I was a fan of the deep red cake with creamy sweet, cream cheese and pecan icing. Let us not forget that I’m from the south, so it’s not too far fetched for me to have a love for red velvet cake. But now a days I don’t have time to make anything from scratch so red velvet cake mix cookies will do. Yes I’m still a low carb eater, but you must treat yourself sometimes.

Red Velvet Cake Mix Cookies w/ Butter Pecan Icing
Cookie batter Ingredients:
1- Box of Red Velvet Cake Mix
1/2 Cup of butter
2 large eggs
1-Teaspoon of vanilla extract
Directions: Pre-heat oven to 350 degrees. Mix all ingredients for batter well, Scoop with an ice cream scoop or make cookies about the size of a golf ball. Then place on a parchment paper lined baking sheet. Bake until cookies are set, which will take about 10-15 minutes depending on oven.
Tip: As soon as you began to smell the cookies, they are probably done and ready for cooling.
Butter Pecan Icing Ingredients:
1/2 cup of unsalted butter
8oz of cream cheese
3 Cups of powdered Sugar (may be replaced with Swerve Powdered sweetener for less calories)
1 teaspoon vanilla
1 teaspoon butter extract
1/2 cup of pecans
Directions for Icing:
mix all ingredients well except pecans and apply icing to cooled cookies. Sprinkle more pecans on top of cookies. You may freeze left over icing in a Ziploc bag. That’s it! This was so easy right? Add vanilla and butter extract to room temperature butter and cream cheese

Then add powered sugar and cream together until smooth.

Crush salted pecans to sprinkle on top.
